Ingredients
- 3 c. sugar
- 1 c. shortening
- 4 eggs
- 2 tsp. vanilla
- 3 1/2 c. self-rising flour (if plain flour is used, add 2 tsp. soda and 1/2 tsp. salt)
- 1/2 c. buttermilk
- 6 small ripe bananas, mashed
- 1 c. pecans, chopped
Method
- Cream shortening, sugar and eggs.
- Add mashed bananas and nuts. Add flour and milk and beat well.
- Grease and flour pans.
- Bake in preheated oven at 325° for about 1 hour and 30 minutes if you use a tube pan and about 1 hour and 10 minutes if you use 2 large loaf pans.
- Sometimes, I freeze one for later.
