Ingredients

  • 3 c. sugar
  • 1 c. shortening
  • 4 eggs
  • 2 tsp. vanilla
  • 3 1/2 c. self-rising flour (if plain flour is used, add 2 tsp. soda and 1/2 tsp. salt)
  • 1/2 c. buttermilk
  • 6 small ripe bananas, mashed
  • 1 c. pecans, chopped

Method

  • Cream shortening, sugar and eggs.
  • Add mashed bananas and nuts. Add flour and milk and beat well.
  • Grease and flour pans.
  • Bake in preheated oven at 325° for about 1 hour and 30 minutes if you use a tube pan and about 1 hour and 10 minutes if you use 2 large loaf pans.
  • Sometimes, I freeze one for later.
