Ingredients

  • 1 c. all-purpose flour
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 c. honey
  • 1/3 c. shortening
  • 2 eggs
  • 1 Tbsp. buttermilk
  • 3 large or 4 small bananas
  • 1 c. chopped nuts

Method

  • Stir together flour, baking powder, soda and 3/4 teaspoon salt.
  • In a mixer bowl, cream honey and shortening with electric mixer.
  • Add milk and eggs one at a time, beating well after each addition.
  • Add flour mixture and bananas alternately, beating after each addition.
  • Fold in nuts.
  • Turn batter into a lightly greased 8 x 4 x 2-inch loaf pan.
  • Bake in a 350° oven for 60 to 65 minutes.
  • Cool in pan for 10 minutes.
  • Remove from pan.
  • Cool. For easier slicing, wrap and store overnight.
