Ingredients
- 1 c. all-purpose flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 c. honey
- 1/3 c. shortening
- 2 eggs
- 1 Tbsp. buttermilk
- 3 large or 4 small bananas
- 1 c. chopped nuts
Method
- Stir together flour, baking powder, soda and 3/4 teaspoon salt.
- In a mixer bowl, cream honey and shortening with electric mixer.
- Add milk and eggs one at a time, beating well after each addition.
- Add flour mixture and bananas alternately, beating after each addition.
- Fold in nuts.
- Turn batter into a lightly greased 8 x 4 x 2-inch loaf pan.
- Bake in a 350° oven for 60 to 65 minutes.
- Cool in pan for 10 minutes.
- Remove from pan.
- Cool. For easier slicing, wrap and store overnight.
