Ingredients

  • 1 34 cups about 4 mashed bananas
  • 34 cup packed light brown sugar
  • 14 cup honey
  • 4 tablespoons margarine, melted
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 pinch salt

Method

  • Preheat oven to 350.
  • Place 12 muffin cups in pan.
  • In large bowl, combine bananas, sugar, honey, and margarine.
  • Beat with an electric mixer until well blended.
  • Slowly add the flour, baking powder, and salt and mix well.
  • Spoon the batter into the cups.
  • Bake for 20 minutes.
  • Remove pan from oven and cool for 5 minutes.
  • Remove the muffins and cool on a rack.
  • Store in airtight container for up to 2 days, or freeze for up to 3 months.
