Ingredients
- 1 34 cups about 4 mashed bananas
- 34 cup packed light brown sugar
- 14 cup honey
- 4 tablespoons margarine, melted
- 2 cups flour
- 1 teaspoon baking powder
- 1 pinch salt
Method
- Preheat oven to 350.
- Place 12 muffin cups in pan.
- In large bowl, combine bananas, sugar, honey, and margarine.
- Beat with an electric mixer until well blended.
- Slowly add the flour, baking powder, and salt and mix well.
- Spoon the batter into the cups.
- Bake for 20 minutes.
- Remove pan from oven and cool for 5 minutes.
- Remove the muffins and cool on a rack.
- Store in airtight container for up to 2 days, or freeze for up to 3 months.
