Ingredients

  • 2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 c. vegetable shortening
  • 3/4 c. firmly packed light brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 tsp. banana extract
  • 2 mashed ripe bananas (1 c.)

Method

  • Combine shortening and brown sugar until light and fluffy.
  • Add egg, vanilla and banana extract.
  • Stir in bananas, then add flour, baking soda and salt.
  • Drop by teaspoonfuls onto greased cookie sheets.
  • Bake at 350° for about 10 minutes.
  • Cool, frost with cream cheese frosting and top with chopped nuts.
