Ingredients

  • 2 c. all-purpose flour
  • 3/4 c. sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. margarine
  • 1/3 c. buttermilk
  • 2 large eggs
  • 1 banana, thinly sliced
  • 1 c. shredded carrots
  • 1/2 c. chopped walnuts or pecans

Method

  • Heat oven to 350°.
  • Grease loaf pan.
  • In large bowl, combine all ingredients, except nuts, with mixer at medium speed until well blended.
  • Stir in nuts. Spoon batter into prepared pan. Bake 55 to 60 minutes or until toothpick comes out clean.
  • Cool in pan 5 minutes, then turn out on wire rack.
  • Makes 1 large loaf.
