Ingredients
- 2 c. all-purpose flour
- 3/4 c. sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. margarine
- 1/3 c. buttermilk
- 2 large eggs
- 1 banana, thinly sliced
- 1 c. shredded carrots
- 1/2 c. chopped walnuts or pecans
Method
- Heat oven to 350°.
- Grease loaf pan.
- In large bowl, combine all ingredients, except nuts, with mixer at medium speed until well blended.
- Stir in nuts. Spoon batter into prepared pan. Bake 55 to 60 minutes or until toothpick comes out clean.
- Cool in pan 5 minutes, then turn out on wire rack.
- Makes 1 large loaf.
