Ingredients

  • 1/2 c. shortening or butter
  • 1 1/2 c. (4 or 5) bananas (best if overripe or brown)
  • 2 eggs, unbeaten
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2 1/2 tsp. baking powder
  • 1 1/4 c. sugar
  • 2 1/4 c. flour
  • 2/3 c. buttermilk (optional)
  • black walnuts (optional)

Method

  • Preheat the oven to 375°.
  • Combine butter and sugar until mixed.
  • Add eggs, vanilla and bananas, beating with wire whisk. Add salt, baking soda, baking powder and finally flour.
  • Mix until well blended.
  • Stir in buttermilk, then walnuts, if desired.
  • Bake at 375° until toothpick inserted in center comes out clean.
  • Makes approximately 2 to 3 loaves.
