Ingredients
- 1/2 c. shortening or butter
- 1 1/2 c. (4 or 5) bananas (best if overripe or brown)
- 2 eggs, unbeaten
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2 1/2 tsp. baking powder
- 1 1/4 c. sugar
- 2 1/4 c. flour
- 2/3 c. buttermilk (optional)
- black walnuts (optional)
Method
- Preheat the oven to 375°.
- Combine butter and sugar until mixed.
- Add eggs, vanilla and bananas, beating with wire whisk. Add salt, baking soda, baking powder and finally flour.
- Mix until well blended.
- Stir in buttermilk, then walnuts, if desired.
- Bake at 375° until toothpick inserted in center comes out clean.
- Makes approximately 2 to 3 loaves.
