Ingredients
- 2 c. crushed gingersnap cookies
- 1/2 c. butter, melted
- 1/4 c. crystallized ginger, finely minced
- 3 x bananas, sliced
- 2 tsp lemon juice
- 1/4 c. sugar
Method
- Combine crushed gingersnaps with butter and ginger to create a crumb mix.
- Place half of the crumb mix along the bottom of a greased 9-inch square pan.
- Place sliced bananas over crumbs.
- Sprinkle bananas with lemon juice and sugar and remaining half of crumb mix.
- Bake at 400 degrees for 20 min.
- Chefs Notes: Use your favorite sugar substitute.
