Ingredients

  • 1/2 c butter (softened)
  • 3/4 c light brown sugar
  • 3/4 c granulated sugar
  • 1 tsp vanilla
  • 1 egg yolk and 1 egg
  • 1 c mashed ripe bananas
  • 1 tsp baking powder
  • 1/2 tsp baking soda and salt
  • 3/4 cup buttermilk
  • 2 c flour

Method

  • Cream butter. gradually add sugars and beat until fluffy. Add vanilla and eggs and beat well. Blend in banana then add mixed dry ingredients alternating w/buttermilk, beating after each addition until smooth. Pour into well greased bread pan. Bake in oven (325 F) for 1 hour or until done (check with toothpick). Cool in pan on rack for 20 min and then turn out.
  • If you don't have buttermilk, you can combine the baking soda and milt to sour it.
