Ingredients
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 bananas ripe, pureed
- 170 grams butter melted
- 1 1/3 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup shredded coconut
Method
- Preheat the oven to 180 Celsius.
- Sift together the flour and baking powder and place into a large mixing bowl along with the salt and cup of shredded coconut. Set aside.
- In a separate bowl mix the butter, bananas, sugar, eggs, and vanilla. Add to the dry ingredients and mix slightly to incorporate.
- Pour into a muffin tin and sprinkle with the remaining coconut.
- Bake for 20-25 minutes, until an inserted toothpick comes out clean. Remove from oven, let cool 10 minutes, and remove from the tin. Let cool completely before serving.
