Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 bananas ripe, pureed
  • 170 grams butter melted
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup shredded coconut

Method

  • Preheat the oven to 180 Celsius.
  • Sift together the flour and baking powder and place into a large mixing bowl along with the salt and cup of shredded coconut. Set aside.
  • In a separate bowl mix the butter, bananas, sugar, eggs, and vanilla. Add to the dry ingredients and mix slightly to incorporate.
  • Pour into a muffin tin and sprinkle with the remaining coconut.
  • Bake for 20-25 minutes, until an inserted toothpick comes out clean. Remove from oven, let cool 10 minutes, and remove from the tin. Let cool completely before serving.
