Ingredients
- 2 c. thinly sliced, unpeeled raw zucchini
- 1/2 c. quick brown rice
- 1/4 c. each cut onion and parsley
- 1 clove garlic, sliced thin
- 1/2 tsp. salt
- 3/4 c. boiling water
- 3 eggs, beaten
- 1/2 c. milk
- 1 c. grated sharp cheese
Method
- Combine zucchini, rice, onion, garlic, salt and parsley in pan.
- Add water, lower heat and cook 15 minutes.
- Add eggs, cheese and
- milk.
- Bake
- at
- 350° for 40 minutes or until set. Serves 6.
