- 6 Tbsp. butter
- 1/4 lb. mushrooms, diced
- 4 scallions, chopped
- 1 stalk celery, chopped
- 1/2 c. seasoned bread crumbs
- 1/2 tsp. salt
- fresh rosemary
- ground pepper
- 3 lb. snapper
- 1/4 c. white wine vinegar
- 1 lemon
- freshly ground pepper
Method
- Preheat oven to 400°.
- Melt butter.
- Add vegetables. Saute 10 minutes.
- Mix in bread crumbs, spices, juice of lemon and wine vinegar.
- Stir over low heat 3 minutes.
- Spoon on snapper fillets. Bake 30 minutes.
