Ingredients

  • 6 Tbsp. butter
  • 1/4 lb. mushrooms, diced
  • 4 scallions, chopped
  • 1 stalk celery, chopped
  • 1/2 c. seasoned bread crumbs
  • 1/2 tsp. salt
  • fresh rosemary
  • ground pepper
  • 3 lb. snapper
  • 1/4 c. white wine vinegar
  • 1 lemon
  • freshly ground pepper

Method

  • Preheat oven to 400°.
  • Melt butter.
  • Add vegetables. Saute 10 minutes.
  • Mix in bread crumbs, spices, juice of lemon and wine vinegar.
  • Stir over low heat 3 minutes.
  • Spoon on snapper fillets. Bake 30 minutes.
