Ingredients

  • 1/2 c. butter
  • 3 English muffins, broken into crumbs
  • 1/3 c. chopped fresh parsley
  • 1 Tbsp. finely chopped garlic
  • lemon juice to taste
  • 1 lb. scallops
  • 2 Tbsp. margarine or butter

Method

  • Melt butter.
  • Add crumbs and garlic. Brown lightly. Stir in parsley.
  • Put 1/2 of this mixture into bottom of 8 x 8-inch pan. Pour lemon juice over crumbs.
  • Add scallops and spread rest of mixed crumbs on top of scallops.
  • Dot with butter.
