Ingredients

  • 3 cups quinoa Cooked
  • 1 tablespoon oregano Chopped
  • 1 cup diced tomatoes
  • 1 cup cucumbers Diced
  • 1/2 cup green onion Chopped
  • 1/2 cup celery Diced
  • 1 1/2 cups broccoli Blanched, cut into bite size pieces
  • 3 tablespoons vinaigrette Lemon
  • 1/2 lemon
  • 1 teaspoon spice Zoe's, Life
  • 4 cups spring mix
  • 1 cup feta cheese crumbles

Method

  • Toss all ingredients together in a mixing bowl, except the feta cheese & spring mix, and mix thoroughly.
  • Place about 1 cup of spring mix in the center of each plate and portion prepared quinoa over the lettuce.
  • Top with feta cheese crumbles.
