- 3 cups quinoa Cooked
- 1 tablespoon oregano Chopped
- 1 cup diced tomatoes
- 1 cup cucumbers Diced
- 1/2 cup green onion Chopped
- 1/2 cup celery Diced
- 1 1/2 cups broccoli Blanched, cut into bite size pieces
- 3 tablespoons vinaigrette Lemon
- 1/2 lemon
- 1 teaspoon spice Zoe's, Life
- 4 cups spring mix
- 1 cup feta cheese crumbles
Method
- Toss all ingredients together in a mixing bowl, except the feta cheese & spring mix, and mix thoroughly.
- Place about 1 cup of spring mix in the center of each plate and portion prepared quinoa over the lettuce.
- Top with feta cheese crumbles.
