Ingredients
- 2 lb. sea scallops
- 1 1/2 sticks butter
- 1/2 c. shallots chopped (green onions or scallions are good too)
- 1/2 lb. lobster meat (small shrimp can be used)
- 1 c. bread crumbs or 1 cup crushed or Ritz crackers
- 2 pkg. whole leaf spinach
Method
- Lay spinach leaves in a greased
- 9x13
- inch pan and spread scallops over them. Combine butter, crumbs and shallots and crumble over scallops. Bake at 400° for 15-20 minutes.
