Ingredients

  • 1 (5 to 8 lb.) red snapper or fillets
  • 1 stick oleo
  • 1/4 to 1/2 c. chopped bell pepper
  • 1/4 to 1/2 c. chopped onion
  • 1/4 c. chopped celery
  • 1/4 c. chopped green onion
  • 2 or 3 lemons, sliced
  • 2 cans stewed tomatoes
  • 1/2 c. wine (red or white)
  • salt and pepper to taste

Method

  • Melt oleo and saute bell pepper, onions, celery and green onions until tender.
  • Add tomatoes, wine and seasoning.
  • Cook slowly on medium heat for 20 minutes.
  • Place fish in baking dish. Pour sauce over fish.
  • Add sliced lemons over fish and bake at 350° for 30 to 40 minutes.
  • Baste fish with sauce.
  • Fish should be tender when stuck with a fork.
