Ingredients
- 2 c. cooked prunes
- 2 tsp. lemon juice
- 1 tsp. grated lemon peel
- 4 Tbsp. sugar
- 4 stiffly beaten egg whites
Method
- Remove the pits from the prunes and mash to a pulp.
- Add lemon juice, grated peel and 2 tablespoons sugar. Blend well. Add remaining 2 tablespoons sugar to the beaten egg whites and beat until stiff.
- Fold prune mixture slowly into beaten whites and pile lightly in a greased baking dish. Bake at 350° for 20 to 30 minutes. Serves 6.
