Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Small Onion, Chopped
  • 1 clove Garlic, Minced
  • 3 whole Sausages, Sliced Into Circles. I Like To Use Turkey Sausage As A Healthier Option.
  • 2 Tablespoons Fresh Basil, Finely Chopped
  • 4 cups Fresh Baby Spinach Leaves

Method

  • 1. Heat oil in a large skillet over medium heat.
  • 2. Add onion and garlic, saute until tender.
  • 3. Add the sausage, and saute until fully cooked, or no pink remains.
  • 4. Sprinkle the basil over top, and then the spinach. Stir gently until all the spinach is just wilted.
  • 5. Salt and pepper to taste.
  • Note: Ground sausage meat will work just as well. I like to slice the sausages while they are bit frozen still, and then they cook up in nice-sized chunks.
