Ingredients
- 1 Tablespoon Olive Oil
- 1 whole Small Onion, Chopped
- 1 clove Garlic, Minced
- 3 whole Sausages, Sliced Into Circles. I Like To Use Turkey Sausage As A Healthier Option.
- 2 Tablespoons Fresh Basil, Finely Chopped
- 4 cups Fresh Baby Spinach Leaves
Method
- 1. Heat oil in a large skillet over medium heat.
- 2. Add onion and garlic, saute until tender.
- 3. Add the sausage, and saute until fully cooked, or no pink remains.
- 4. Sprinkle the basil over top, and then the spinach. Stir gently until all the spinach is just wilted.
- 5. Salt and pepper to taste.
- Note: Ground sausage meat will work just as well. I like to slice the sausages while they are bit frozen still, and then they cook up in nice-sized chunks.
