Ingredients

  • 1 1/2 c. Cheddar cheese, shredded
  • 1 (4 ounce.) can diced green chili peppers, liquid removed
  • 1 (2 1/4 ounce.) can sliced ripe olives, liquid removed
  • 1/4 c. green onions, sliced
  • 1/4 c. mayonnaise or possibly salad dressing
  • 36 to 40 round tortilla chips

Method

  • In large bowl combine cheese, chili peppers, olives, onion and mayonnaise.
  • Gently mix in shrimp.
  • Top each tortilla chip with rounded tsp.
  • of mix, arrange on microwave safe platter and cook 1 to 2 min till cheese is melted.
  • Makes 36 to 40 appetizer chips.
  • 12 servings.
