Ingredients

  • 4 large baking potatoes
  • 4 large eggs
  • salt and pepper to taste
  • 2 Tbsp. onion, chopped
  • 1 Tbsp. margarine
  • 1/4 c. milk

Method

  • Preheat oven to 400°.
  • Scrub potatoes and pierce with a fork several times.
  • Bake for 1 hour or until potatoes give slightly under pressure when squeezed.
  • Slice tops off baked potatoes and scoop out 3/4 of potato and set aside in medium bowl.
  • Sprinkle salt and pepper inside each potato skin and drop 1 raw egg into each skin.
  • Bake potatoes 15 minutes in oven or until egg yolks are set.
  • While eggs are cooking; heat margarine in pan; add onion. Cook for 5 minutes over medium heat.
  • Add cooked onion, milk, salt and pepper to scooped out potato and mash.
  • Remove potato skins from oven and stuff mashed potato mixture back in and reheat.
