Ingredients
- 4 large baking potatoes
- 4 large eggs
- salt and pepper to taste
- 2 Tbsp. onion, chopped
- 1 Tbsp. margarine
- 1/4 c. milk
Method
- Preheat oven to 400°.
- Scrub potatoes and pierce with a fork several times.
- Bake for 1 hour or until potatoes give slightly under pressure when squeezed.
- Slice tops off baked potatoes and scoop out 3/4 of potato and set aside in medium bowl.
- Sprinkle salt and pepper inside each potato skin and drop 1 raw egg into each skin.
- Bake potatoes 15 minutes in oven or until egg yolks are set.
- While eggs are cooking; heat margarine in pan; add onion. Cook for 5 minutes over medium heat.
- Add cooked onion, milk, salt and pepper to scooped out potato and mash.
- Remove potato skins from oven and stuff mashed potato mixture back in and reheat.
