Ingredients

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 14 teaspoon salt
  • 1 cup whole milk or 1 cup cream
  • 4 tablespoons butter
  • 2 tablespoons finely chopped onions
  • 16 ounces frozen chopped spinach
  • white sauce
  • 12 cup sour cream
  • salt
  • pepper
  • sliced tomatoes (optional)
  • sliced provolone cheese (optional)

Method

  • To prepare white sauce:
  • Melt butter, add flour and salt.
  • Whisk continuously for about 5 minutes or until you have a nice roux.
  • Slowly add milk or cream, stirring until thick.
  • To prepare creamed spinach:
  • Melt butter in a pan, add onion.
  • Saute for 2 minutes.
  • Add spinach (frozen or thawed) and cook until spinach is thawed and warm.
  • Add white sauce and sour cream.
  • Season to taste with salt and pepper.
  • At this point, you can get really fancy and top with sliced provolone and tomatoes and stick under the broiler for a few minutes.
  • Note: I have used whole wheat flour to make the white sauce with no bad effects.
