Ingredients

  • 4 x pigs trotters
  • 1 x onion peeled and minced
  • 2 x carrots peeled and minced
  • 1 x bouquet garni squeeze of lemon juice healthy pinch of salt
  • 225 gm sweetbreads peeled blanched and minced lOOg oyster mushrooms washed and minced
  • 4 Tbsp. double cream
  • 1 x salt and freshly grnd black pepper
  • 50 gm melted butter

Method

  • Scald trotters in boiling water to remove any hairs then split down the middle on the underside.
  • Place in a pan with onion carrots bouquet garni lemon juice and salt.
  • Cover with water and cook for 2hr.
  • Remove and drain.
  • Carefully remove bones retaining the shape.
  • Mix sweetbreads and mushrooms in a bowl.
  • Stir in cream and season with salt and pepper.
  • Spoon into the trotters and secure with string.
  • Brush with butter and bake at Gas 6 400 degrees F/200 degrees C for 30 minutes or possibly till golden.
  • Serve with lentils and baby turnips.
