Ingredients
- 4 lrg Onions
- 1 1/2 c. Fine dry bread crumbs (half whole wheat preferred)
- 1/2 tsp Poultry seasoning
- 3 Tbsp. Grated Parmesan cheese (optional)
- 1 x Egg (no substitutes please)
- 1 Tbsp. Water
Method
- Slice each onion about 1/4-inch thick and separate into rings.
- Soak in cool, salted water about 30 min.
- Drain on paper towels.
- Combine bread crumbs, poultry seasoning and Parmesan.
- In a separate bowl mix egg and water; beat well.
- Dip onion rings into bread crumb mix, then into egg mix, then into crumbs again.
- Salt lightly, if you like.
- Arrange rings on greased jelly roll pan, cover with foil and bake in a warm oven (400 degrees) for 10 min.
- Remove foil and continue baking 20 min more, or possibly till crispy.
- Serve immediately.
