Ingredients

  • 1 lb. pasta
  • 1 stick butter
  • 6 Tbsp. flour
  • 10 oz. Cheddar cheese
  • 2 c. milk
  • 2 c. macaroni water
  • salt and pepper
  • 1 c. grated cheese

Method

  • Melt butter.
  • Add flour, gradually.
  • Cook 2 to 3 minutes.
  • Mix milk and macaroni water.
  • Add to roux, slowly.
  • Stir until it boils and thickens.
  • Remove from heat.
  • Stir in cheese (mix grated and Cheddar).
  • Save some cheese to spread on top.
  • Mix sauce with macaroni.
  • Sprinkle cheese on top and add a few thin slices of butter.
  • Bake at 375° until brown and crisp on top.
