Ingredients

  • 1 lb boneless skinned chicken breasts
  • 2 tsp virgin extra virgin olive oil
  • 6 Tbsp. dry white wine
  • 1/4 c. fresh lemon juice
  • 2 tsp dry leaf tarragon
  • 2 tsp dry leaf basil
  • 1/2 tsp warm red pepper flakes Preheat the oven to 350 degrees F.

Method

  • Trim any fat from chicken breasts and lb.
  • lightly between two sheets of waxed paper to flatten.
  • Coat with extra virgin olive oil and place in a baking dish.
  • Add in wine, lemon juice, herbs and pepper flakes, turning chicken to coat both sides.
  • Cover dish with foil.
  • Bake 25 to 30 min, till chicken is cooked through.
