Ingredients
- 1 pkg. (2 lb.) frozen hash browns (defrosted)
- 1/2 c. onions, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 stick butter or margarine (I use light margarine sticks like parkay)
- 1 can cream of chicken soup
- 1 c. of canned milk (I use the skim milk)
- 1 c. sour cream (I use Land o'Pine fat free)
- 2 c. grated cheddar cheese (I use Alpine Lace or other light cheddar)
Method
- Melt butter; thaw potatoes enough to mix well.
- Combine all other ingredients, except cheese, with potatoes and butter. Pour into greased 9X13 pan.
- Cover with cheese.
- Bake at 350 for 45-60 minutes.
