Ingredients

  • 1 pkg. (2 lb.) frozen hash browns (defrosted)
  • 1/2 c. onions, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 stick butter or margarine (I use light margarine sticks like parkay)
  • 1 can cream of chicken soup
  • 1 c. of canned milk (I use the skim milk)
  • 1 c. sour cream (I use Land o'Pine fat free)
  • 2 c. grated cheddar cheese (I use Alpine Lace or other light cheddar)

Method

  • Melt butter; thaw potatoes enough to mix well.
  • Combine all other ingredients, except cheese, with potatoes and butter. Pour into greased 9X13 pan.
  • Cover with cheese.
  • Bake at 350 for 45-60 minutes.
