Ingredients

  • 6 medium-sized green peppers
  • 1 lb. pork sausage
  • 3/4 c. chopped onion
  • 3 c. crumbled cornbread
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 c. milk

Method

  • Wash peppers; cut off tops.
  • Cook in boiling salted water about 6 minutes and drain.
  • Cook sausage; pour off drippings.
  • Add onion, cooking until transparent.
  • Place mixture in a bowl; add remaining ingredients.
  • Stir lightly until blended.
  • Fill peppers with mixture.
  • Stand peppers up in shallow baking dish; cover bottom of dish with 1/4-inch hot water.
  • Bake at 350° for 15 to 20 minutes.
