Ingredients

  • 1 can bean dip
  • 1/2 c. lite mayonnaise
  • 1 c. lite sour cream
  • 1 pkg. taco seasoning mix
  • 1 large baking potato
  • 1 Tbsp. lemon juice
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 10 black olives
  • 1/2 c. Cheddar cheese, grated
  • 11 1/2 oz. plain taco chips

Method

  • Microwave potato; peel and mash.
  • While warm, mix with taco seasoning, sour cream, mayonnaise and lemon juice.
  • In shallow dish, layer bean dip, potato mix, vegetables and Cheddar cheese. Serve with plain, unseasoned chips.
  • I use a pedestal type dish and arrange vegetables in an attractive manner.
  • Leftovers keep well covered and refrigerated.
  • Serves 15.
