Ingredients
- 1 (3 lb.) fish, dressed
- bread or mushroom force meat, well seasoned
- salt and pepper to taste
- 1/3 c. melted butter
- 3/4 c. hot water
- 4 strips bacon
- 1 strip cheesecloth
Method
- Wash fish thoroughly.
- Rub inside and out with salt and pepper.
- Prepare highly seasoned bread or mushroom force meat. Stuff.
- Lay the fish straight in the cheesecloth with the back up, to resemble a live fish.
- Cover tail with strip of brown paper to prevent burning.
- Lay strips of bacon about 2-inches apart across fish.
- Bake uncovered at 350° for about 40 minutes.
- Baste every 10 minutes with 1/2 cup hot water and 2 tablespoons butter or a Spanish sauce.
- When ready to serve, remove paper from tail. Garnish with parsley, tomato slices, lemon and pickles.
- Make eyes of small stuffed olives.
- Serve with tartar or Spanish sauce.
