Ingredients

  • 1 (3 lb.) fish, dressed
  • bread or mushroom force meat, well seasoned
  • salt and pepper to taste
  • 1/3 c. melted butter
  • 3/4 c. hot water
  • 4 strips bacon
  • 1 strip cheesecloth

Method

  • Wash fish thoroughly.
  • Rub inside and out with salt and pepper.
  • Prepare highly seasoned bread or mushroom force meat. Stuff.
  • Lay the fish straight in the cheesecloth with the back up, to resemble a live fish.
  • Cover tail with strip of brown paper to prevent burning.
  • Lay strips of bacon about 2-inches apart across fish.
  • Bake uncovered at 350° for about 40 minutes.
  • Baste every 10 minutes with 1/2 cup hot water and 2 tablespoons butter or a Spanish sauce.
  • When ready to serve, remove paper from tail. Garnish with parsley, tomato slices, lemon and pickles.
  • Make eyes of small stuffed olives.
  • Serve with tartar or Spanish sauce.
