Ingredients
- 8 to 10 long green chilies
- 10 oz. Jack cheese, grated
- 1/2 tsp. salt
- 1/2 tsp. cumin
- 5 eggs, well beaten
- 2 Tbsp. butter
- 1/2 tsp. pepper
Method
- Layer peppers, alternately with cheese in a deep buttered 1 1/2-quart casserole dish.
- Mix beaten eggs, butter, salt, pepper and cumin.
- Pour mixture over the peppers and cheese.
- Bake for 35 to 40 minutes at 350°.
- This spicy souffle-like dish serves 4 to 6 people.
