Ingredients
- 4 c. chopped, cooked chicken
- 2 c. chopped celery
- 1 tsp. minced onion
- 1 (2 oz.) jar chopped pimento, drained
- 4 hard-boiled eggs, sliced
- 3/4 c. mayonnaise
- 3/4 c. undiluted chicken soup
- 2 Tbsp. lemon juice
- 1 tsp. salt
- Topping
Method
- Combine chicken, celery, onion, pimento, eggs, mayonnaise, soup, lemon juice and salt in bowl; mix well.
- Spoon into 1 1/2-quart baking dish.
- Sprinkle topping over casserole.
- Chill for several hours to overnight.
- Bake at 400° for 25 minutes. Yield:
- 8 servings.
