Ingredients
- 1 whole Broccoli Stem
- 1 whole Egg
- 1 Tablespoon Milk
- 1 cup Panko Bread Crumbs
- 1 teaspoon Salt
- 1 teaspoon Onion Powder
- 1 teaspoon Cayenne Pepper
Method
- Im a big fan of broccoli chips because they are easy and delicious, but mostly because theyre a clever way to make use of the broccoli stem that so many of us toss in the trash.
- A while back, I got tired of wasting the stems and started slicing them up and tossing them into my stir fry recipes.
- Now, Ive discovered an even more enjoyable way to eat those veggies.
- Heck, kids might even like these too!
- Heres how you make them:
- Preheat oven to 350 degrees F.
- Slice the broccoli stem into coins about a quarter inch thick and set aside.
- Make an eggwash by whisking together the egg and milk in a small bowl.
- In a separate, shallow bowl, mix the panko, salt, onion powder and cayenne.
- Dip the broccoli coins (one by one) into the eggwash and then into the panko until well-coated.
- Place on a cookie sheet and bake for 10 to 15 minutes until the panko is toasted brown.
- The coins will be tender inside and crispy outside.
- These make a perfect snack or appetizer and can be dipped in a variety of dipping sauces (like spicy mayo!).
