Ingredients

  • 1 bag navy pea beans
  • 1 onion, cut up
  • 2 to 3 slices bacon, cut up
  • 2 to 3 slices bacon (leave whole)
  • brown sugar
  • molasses
  • dry mustard
  • salt and pepper
  • baking soda

Method

  • Wash and sort beans.
  • Only add cold water to cover beans.
  • Add approximately 1 tablespoon baking soda.
  • Cover and bring to boil. It will be very foamy.
  • Remove from heat and rinse under cold water.
  • (This supposedly removes some gas from the beans.)
  • Cover again with cold water (only cover, no more).
  • Add cut up onion, cut up bacon, salt and pepper.
  • Cover and bring to boil, then simmer until beans are soft, but not mushy (water should be almost absorbed).
  • Add molasses, dry mustard and brown sugar to taste. Pour into baking dish.
  • Lay bacon strips on top.
  • Bake at 350° for 30 minutes.
