Ingredients
- 1 bag navy pea beans
- 1 onion, cut up
- 2 to 3 slices bacon, cut up
- 2 to 3 slices bacon (leave whole)
- brown sugar
- molasses
- dry mustard
- salt and pepper
- baking soda
Method
- Wash and sort beans.
- Only add cold water to cover beans.
- Add approximately 1 tablespoon baking soda.
- Cover and bring to boil. It will be very foamy.
- Remove from heat and rinse under cold water.
- (This supposedly removes some gas from the beans.)
- Cover again with cold water (only cover, no more).
- Add cut up onion, cut up bacon, salt and pepper.
- Cover and bring to boil, then simmer until beans are soft, but not mushy (water should be almost absorbed).
- Add molasses, dry mustard and brown sugar to taste. Pour into baking dish.
- Lay bacon strips on top.
- Bake at 350° for 30 minutes.
