Ingredients

  • 9 baked potatoes
  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 1 cup bacon
  • to taste salt and pepper
  • 1/2 cup green onions
  • 1/2 cup cheddar cheese (maybe a little more)
  • 1 egg yolk

Method

  • Bake all the potatoes
  • Hold the potatoes with a towel and cut a round hole on the top enough to pull out a decent piece to then re-attach later
  • Clean all the potatoes of there insides in a bowl this will become he "mash potato part "
  • Put salt and pepper on the inside of all the potatoes
  • Then use all the tops of the potatoes and flip them to the skin part is facing the inside of the potato
  • Put the butter, the sour cream, salt & pepper, bacon, onions, cheese, egg yolk mash together well
  • Afterwards scoop the mashed potatoes into the baked potatoes hollow center
  • Fill to top, put cheese and cover once more with mashed potatoes on top and than put bacon pieces on top of the mashed potatoes before putting in oven
  • Bake at 400F for 25 min
