Ingredients

  • olive oil for brushing
  • 4 slices bacon halved
  • 4 ounces cherry tomatoes halved
  • 3 green onions sliced
  • 8 eggs lightly beaten
  • 4 large flour tortillas warmed

Method

  • Heat a large skillet on medium heat; lightly brush with oil. Cook bacon for 4-5 mins, turning occasionally, until golden. Push to one side.
  • Add tomatoes, and cook, stirring occasionally, until tender and browned. Push to one side.
  • Sprinkle in onions. Cook for 1 min. Push to one side.
  • Pour in half the egg, a little at a time, adding more as it sets by making a well in the set egg and pouring the liquid egg into it, to help keep it together. Use a spatula to keep egg from running to sides as it sets. Repeat with remaining egg.
  • Spoon eggs, bacon, tomatoes and onions onto warmed tortillas.
