Ingredients

  • 2 12 lbs baking potatoes, cubed, peeled
  • 1 cup extra-sharp cheddar cheese, shredded
  • 1 cup 2% low-fat milk
  • 12 cup green onion, chopped
  • 2 tablespoons sour cream, reduced fat
  • 12 teaspoon salt
  • 12 teaspoon fresh ground pepper
  • 4 bacon, slices cooked and crumbled (drained)

Method

  • Place potato in a saucepan, and cover with water.
  • Bring to a boil.
  • Reduce heat; simmer 15 minutes or until tender.
  • Drain and return potato to pan.
  • Add cheese and milk; mash to desired consistency.
  • Cook 2 minutes or until thoroughly heated, stirring constantly.
  • Add onions and remainiing ingredients, stirring to combine.
