Ingredients
- 2 12 lbs baking potatoes, cubed, peeled
- 1 cup extra-sharp cheddar cheese, shredded
- 1 cup 2% low-fat milk
- 12 cup green onion, chopped
- 2 tablespoons sour cream, reduced fat
- 12 teaspoon salt
- 12 teaspoon fresh ground pepper
- 4 bacon, slices cooked and crumbled (drained)
Method
- Place potato in a saucepan, and cover with water.
- Bring to a boil.
- Reduce heat; simmer 15 minutes or until tender.
- Drain and return potato to pan.
- Add cheese and milk; mash to desired consistency.
- Cook 2 minutes or until thoroughly heated, stirring constantly.
- Add onions and remainiing ingredients, stirring to combine.
