Ingredients
- 1/2 c. butter (no substitute)
- 1/2 c. white sugar
- 1/2 c. brown sugar
- 1 egg, beaten
- 1/2 tsp. vanilla
- 1/2 c. coconut (unsweetened, if possible)
- 1 c. oats
- 1/2 c. Rice Krispies
- 1 c. all-purpose flour
- 1/2 tsp. each: baking powder, soda and salt
Method
- Mix the flour, baking powder, soda and salt.
- Cream butter and sugars; add beaten egg and vanilla.
- Add flour mixture, then oats, coconut and lastly the Rice Krispies.
- Drop by scant teaspoonful on cookie sheet.
- Flatten each with fingers or "heel" of palm. Bake at 350° for 12 to 15 minutes until nicely browned.
- Remove quickly from baking sheet to cooling rack with spatula.
