Ingredients

  • 1/2 c. butter (no substitute)
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 egg, beaten
  • 1/2 tsp. vanilla
  • 1/2 c. coconut (unsweetened, if possible)
  • 1 c. oats
  • 1/2 c. Rice Krispies
  • 1 c. all-purpose flour
  • 1/2 tsp. each: baking powder, soda and salt

Method

  • Mix the flour, baking powder, soda and salt.
  • Cream butter and sugars; add beaten egg and vanilla.
  • Add flour mixture, then oats, coconut and lastly the Rice Krispies.
  • Drop by scant teaspoonful on cookie sheet.
  • Flatten each with fingers or "heel" of palm. Bake at 350° for 12 to 15 minutes until nicely browned.
  • Remove quickly from baking sheet to cooling rack with spatula.
