Ingredients
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. butter
- 3 to 4 lb. yellow, white or zucchini squash
- 1 1/2 c. fine bread crumbs
- 1/4 tsp. black pepper
- 2 eggs, beaten
Method
- Saute onions and green pepper until soft and light brown. Wash and slice squash.
- Cook in boiling water until soft.
- Drain and put through food processor, blender or chopper.
- Add onion, green pepper, butter, bread crumbs and seasonings.
- Add eggs and beat thoroughly.
- Pour into well-buttered casserole and bake at 350° for 30 minutes.
- Serves 8 to 10.
