Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. butter
  • 3 to 4 lb. yellow, white or zucchini squash
  • 1 1/2 c. fine bread crumbs
  • 1/4 tsp. black pepper
  • 2 eggs, beaten

Method

  • Saute onions and green pepper until soft and light brown. Wash and slice squash.
  • Cook in boiling water until soft.
  • Drain and put through food processor, blender or chopper.
  • Add onion, green pepper, butter, bread crumbs and seasonings.
  • Add eggs and beat thoroughly.
  • Pour into well-buttered casserole and bake at 350° for 30 minutes.
  • Serves 8 to 10.
