Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 3 x Cloves Garlic, chopped
  • 1 lrg Aubergine, peeled and diced
  • 1 Tbsp. Water
  • 1 c. Seasoned Bread Crumbs
  • 1/2 c. Fresh Parsley, minced
  • 2 x Large eggs, beaten
  • 1/2 c. Grated Cheese Extra virgin olive oil Marinara Sauce Mozzarella Cheese

Method

  • In large saucepan, heat oil and gently saute/fry garlic till golden.
  • Add in diced aubergine, water, and cover.
  • Reduce heat and gently steam till aubergine is very soft.
  • In mixing bowl, combine aubergine, bread crumbs, parsley, Large eggs and cheese.
  • Mix well and let stand 20 min.
  • Form into balls and fry on all sides in extra virgin olive oil.
