Ingredients

  • 1 c. buttermilk
  • 2 c. sugar
  • 1 tsp. soda
  • dash of cinnamon
  • 2 c. chopped pecans
  • 1 tsp. vanilla
  • 1 tsp. butter flavoring
  • 1 Tbsp. margarine

Method

  • Combine milk, soda, sugar and cinnamon in a large heavy saucepan.
  • Bring to boil.
  • Boil to a soft ball stage.
  • Remove from heat.
  • Stir in pecans, vanilla, butter and butter flavoring.
  • Beat until candy loses its gloss.
  • Scrape to one end of the pan.
  • When it begins to thicken and gets creamy looking, drop by teaspoonful onto wax paper.
  • Remove from wax paper as soon as the pralines congeal.
