Ingredients

  • 2 (10 oz.) pkg. frozen whole asparagus spears
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • few grains pepper
  • 2 Tbsp. butter, melted
  • 1 c. undiluted milk
  • 1/2 c. water
  • 4 sliced, hard-cooked eggs
  • 1/2 c. shredded process American cheese
  • 1/2 c. soft bread cubes

Method

  • Cook asparagus according to package directions; drain well. Melt butter in saucepan over low heat.
  • Stir in flour and seasonings.
  • Slowly add milk and water.
  • Cook until mixture thickens, stirring constantly.
  • Arrange half of asparagus in buttered 2-quart baking dish.
  • Place half of eggs, cheese and sauce over asparagus.
  • Repeat layers.
  • Combine butter and bread cubes; sprinkle over top of casserole.
  • Bake in moderate oven (350°) for 20 minutes.
  • Makes 6 servings.
