Ingredients
- 2 pkg. frozen artichokes or spinach
- 2 sheets frozen puff pastry, thawed
- 5 Tbsp. Ricotta cheese
- 2 eggs
- 2 Tbsp. olive oil
- 2 Tbsp. Parmesan cheese
Method
- Thaw and chop the artichokes.
- In a large skillet, cook the artichokes in the oil over low heat for 5 minutes.
- Add the Ricotta cheese and Parmesan cheese and stir the eggs in the mixture.
- Season with salt.
- Line an 8-inch pan with 1 sheet of puff pastry.
- Pour the mixture into the pastry case.
- Cover with the remaining sheet of puff pastry.
- Seal and trim the edges. Bake the pie in a preheated 350° oven for about 40 minutes or until the pastry begins to brown.
