Ingredients

  • 2 pkg. frozen artichokes or spinach
  • 2 sheets frozen puff pastry, thawed
  • 5 Tbsp. Ricotta cheese
  • 2 eggs
  • 2 Tbsp. olive oil
  • 2 Tbsp. Parmesan cheese

Method

  • Thaw and chop the artichokes.
  • In a large skillet, cook the artichokes in the oil over low heat for 5 minutes.
  • Add the Ricotta cheese and Parmesan cheese and stir the eggs in the mixture.
  • Season with salt.
  • Line an 8-inch pan with 1 sheet of puff pastry.
  • Pour the mixture into the pastry case.
  • Cover with the remaining sheet of puff pastry.
  • Seal and trim the edges. Bake the pie in a preheated 350° oven for about 40 minutes or until the pastry begins to brown.
