Ingredients

  • 2 (6 oz.) jar marinated artichoke hearts
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 4 eggs (extra large)
  • 1/2 c. fine, dry bread crumbs
  • 1/4 tsp. each: white pepper, oregano and Tabasco sauce
  • 1/2 lb. sharp Cheddar cheese (2 c.)
  • 2 Tbsp. minced parsley

Method

  • Drain marinade from 1 jar artichokes into a small frypan. Drain the other jar.
  • Chop artichokes fine, discarding any hard pieces; set aside.
  • Add onion and garlic to marinade and saute until limp.
  • Drain off excess marinade.
