Ingredients

  • 1 (3 lb.) frying chicken, cut in pieces
  • 1/2 cup salad oil
  • 1 medium sweet onion, diced
  • 1 medium sweet green pepper, diced
  • 2 tomatoes, diced
  • 1 clove garlic, chopped
  • 1 1/2 cups uncooked rice
  • 4 cups boiling water or chicken broth
  • 1/8 tsp. saffron
  • 1 tsp. salt

Method

  • Shake chicken in seasoned flour, fry in oil till brown.
  • Cover and cook about 10 minutes longer.
  • Remove.
  • Saute onion and pepper in same oil.
  • Add tomatoes and garlic and cook together to blend seasonings.
  • Stir in uncooked rice and let cook a few minutes.
  • Mix all ingredients carefully to blend fully.
  • Pour boiling water into mixture, add salt and saffron, blend thoroughly and cook about 3 minutes more.
  • Put in casserole and arrange pieces of fried chicken on top of rice mixture.
  • Bake uncovered 20-30 minutes at 350° until rice is done.
  • Rice should not be mushy.
