Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup chopped dried apricots
  • 2/3 cup sugar
  • 1/2 cup chopped walnuts
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 teaspoons grated orange rind
  • 1 cup orange juice
  • 1/2 cup 1% low-fat milk
  • 3 tablespoons unsweetened applesauce
  • 2 egg whites, lightly beaten
  • Vegetable cooking spray

Method

  • Combine first 7 ingredients in a large bowl. Combine juice and the next 3 ingredients in a bowl; stir well. Add to dry ingredients, stirring just until moistened.
  • Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Remove from pan; let cool on a wire rack.
