Ingredients

  • 4 x boneless chicken breasts
  • 3 slc bacon minced
  • 2 x cloves garlic chopped
  • 3 x scallions finely minced
  • 1 x apple peeled and minced Pepper to taste Salt to taste
  • 1/2 tsp thyme
  • 1/3 c. Parmesan cheese
  • 2 tsp extra virgin olive oil

Method

  • Cut a small pocket into the thickest part of each chicken breast and set aside.
  • Fry bacon till crisp.
  • Drain on a paper towel.
  • Add in garlic and scallions to the bacon drippings; saute/fry slightly.
  • Add in apple, pepper, salt and thyme and return the bacon bits to pan.
  • Heat thoroughly.
  • Remove from heat and cold.
  • When mix is cold, add in cheese and stuff into chicken breast.
  • Brown chicken on both sides in a very warm fry pan with extra virgin olive oil.
  • When brown on both sides, place in a baking dish and bake at 350 F for 15 to 20 min or possibly till chicken is done.
