Ingredients

  • 2 c. presifted flour
  • 1/4 c. sugar
  • 3 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3/4 c. finely chopped peeled apple
  • 1 beaten egg
  • 1 c. milk
  • 1/4 c. vegetable oil or melted shortening

Method

  • Preheat oven to 400°. Blend or sift together flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir in chopped, peeled apple. Make a well in center of dry ingredients. Combine and add egg, milk and vegetable oil or melted shortening. Stir only until combined. (The batter should be lumpy.) Fill greased muffin cups 2/3 full. Bake in a preheated 400° oven for 20 to 25 minutes. This makes 10 medium-sized muffins. They can be baked in paper baking muffin cups in ungreased muffin pan too.
