Ingredients

  • 3 Tbsp. light mayonnaise or light cream cheese
  • 1 tsp. curry powder
  • 1 1/2 tsp. chutney, chopped fine
  • 4 thin slices firm white bread
  • 4 oz. Applewood smoked white Cheddar, thinly sliced
  • 1/2 medium Granny Smith apple, thinly sliced
  • 1/3 c. watercress leaves
  • softened butter or margarine or cream cheese

Method

  • Combine mayonnaise or cream cheese, curry powder and chutney. Mix well and divide between bread slices.
  • Spread butter on the outside surface of bread.
  • Heat nonstick skillet.
  • Put half of cheese on two bread slices; divide and layer with apple slices overlapping top with watercress leaves, then layer with remaining cheese.
  • Top with remaining slices of bread and press together. Place in warmed skillet.
  • Put butter on top side while in skillet. Cook about 4 minutes per side to brown, turning carefully.
  • Cut in quarters to serve.
