Ingredients

  • FOR THE FRITTERS:
  • 1-3/4 cup All-purpose Flour
  • 1/3 cups Cornmeal
  • 2 Tablespoons Vanilla Sugar
  • 2 teaspoons Baking Powder
  • 1/8 teaspoons Salt
  • 2 whole Egg Whites
  • 2 whole Tart Apples Cubed, Or Less If Preferred
  • 1 cup 1% Milk
  • Oil, For Frying
  • _____
  • FOR THE SUGAR COATING:
  • 1/3 cups Vanilla Sugar
  • 1/2 teaspoons Ground Nutmeg
  • 1/2 teaspoons Cinnamon

Method

  • Note: You may want to only use 1 1/2 apples depending on your love for chunks.
  • In a bowl, stir together the flour, cornmeal, sugar, baking powder and salt. In a medium-sized bowl, combine egg whites, apples, and milk. Add to the flour mixture all at once and stir just until combined.
  • In a large pot (safety first!), heat about an inch of oil over moderately high heat to 375°F. Drop batter by heaping tablespoonfuls, about 4-5 per batch, into the hot oil. Cook for 3 to 4 minutes or until golden, turning only once.
  • Use a slotted spoon to remove and place on paper towels to absorb some of the excess oil. In a Ziploc, combine the sugar, nutmeg and cinnamon for the coating. Add the hot fritters, several at a time, and shake to coat. Serve immediately!
