Ingredients
- 2 T butter
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/2 lb butternut squash, peeled, sees and cut into 1/2 inch cubes, about 5 cups
- 2 - 3 Granny Smith apples cut into 1/2 inch cubes, about 4 cups
- 1/4 cup real maple syrup
- 1 T balsamic vinegar
- 1/4 c toasted chopped pecans
Method
- Heat oven to 375.
- Place butter in 13x9 or 3 qt glass baking dish. Heat until melted.
- Stir cinnamon and nutmeg into the butter, add squash to coat.
- Cover with foil and bake 20 minutes.
- In a large bowl, mix apples, syrup and vinegar.
- Pour apple mixture over the squash.
- Cover and bake 10 minutes. Stire and bake 5 to 10 minutes longer or until squash is tender.
- Stir before serving and sprinkle with pecans.
