Ingredients

  • 2 T butter
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 lb butternut squash, peeled, sees and cut into 1/2 inch cubes, about 5 cups
  • 2 - 3 Granny Smith apples cut into 1/2 inch cubes, about 4 cups
  • 1/4 cup real maple syrup
  • 1 T balsamic vinegar
  • 1/4 c toasted chopped pecans

Method

  • Heat oven to 375.
  • Place butter in 13x9 or 3 qt glass baking dish. Heat until melted.
  • Stir cinnamon and nutmeg into the butter, add squash to coat.
  • Cover with foil and bake 20 minutes.
  • In a large bowl, mix apples, syrup and vinegar.
  • Pour apple mixture over the squash.
  • Cover and bake 10 minutes. Stire and bake 5 to 10 minutes longer or until squash is tender.
  • Stir before serving and sprinkle with pecans.
