Ingredients

  • 3 small baking apples, peeled, halved and cored
  • 2 cups flour
  • 14 teaspoon salt
  • 12 cup chilled butter, cut into half inch cubes
  • 3 tablespoons butter, melted (for brushing)
  • 12 cup water (you may not need all of it)
  • 34 cup brown sugar
  • 1 teaspoon cinnamon
  • 14 teaspoon nutmeg
  • 12 cup chopped pecans
  • 12 cup coarse sugar (optional)
  • whipped cream or vanilla ice cream, for serving

Method

  • In a food processor, combine flour, butter, salt and water.
  • Pulse until coarse crumbles form.
  • Divide dough into 3 equal portions and flatten into disks.
  • Wrap each disk in plastic wrap and chill in refrigerator for about 30 minutes.
  • Meanwhile, preheat oven to 350F and prepare apples.
  • In a small bowl, mix brown sugar, cinnamon, nutmeg and pecans.
  • Take dough from refrigerator and roll out into 9"-10" rounds.
  • Place half of an apple in the center of the dough and top with 1/3 of the brown sugar mixture.
  • Place the other apple half on top.
  • Pull the dough up and around the apple to cover and pinch seams to close.
  • Place apples on a lightly greased baking dish, seam side down, and brush tops with butter.
  • If desired, press course sugar granules lightly into the tops of the dumplings.
  • Bake for about 50 minutes.
  • Serve warm with a side of whipped cream or vanilla ice cream.
